“Gaido’s” galveston Gumbo
(120 year old recipe)
Ingredients
4 tbsp butter 1/2 cup flour
1 large chopped onion 1 chopped bell pepper
2 stalks chopped celery 11/2 cups okra
7 cups chicken broth ½ tbsp tomato paste
1 tsp pepper hot sauce
Worcestershire sauce 1 bag crab boil
1 tbsp salt 1 lb boiled shrimp or chicken
Rice 1 lb chopped Andouille
Lagniappe
Make a copper color roux with the flour and butter.
Sweat the onions in a large sauce pan till they have caramelized,
Add the peppers and celery and cook for another 5 minutes.
Add the mixture to the roux and cook another 5 minutes.
Add the Okra and ½ the chicken stock, bring to a simmer and cook till the
okra falls apart.
Add the tomato paste, pepper, hot sauce, Worcestershire sauce. Bring to a
boil and simmer for 30 minutes.
While the pot is boiling, simmer the crab boil in the remaining ½ of the broth
for 3 minutes and discard the bag.
Add the mixture to the boiling pot along with the shrimps, chicken and
andouille
Serve with rice and some garlic French bread
