Gumbo Casserole


                                         Ingredients


               1 lb shrimp
               1 tsp Cajun seasoning
               1 cup chopped green pepper
               1/2 cup chopped celery
               2 tsp minced garlic
               1 tbsp olive oil
               1 lb chopped Andouille
               1 -14 oz can diced tomatoes
               1 -10 oz can cream of chicken soup
               1 -9 oz package of okra
               2 tbsp tomato paste
               1/2 tsp salt
               1/2 tsp cayenne

                                         Lagniappe




               In a large skillet, cook the peppers, onions, celery and garlic in hot oil till
               tender.

               Stir in the sausage, tomatoes, soup, okra, tomato paste, salt and cayenne and
               heat till bubbly.

               Add the shrimp and return to a boil.

               Transfer to a baking dish and bake uncovered at 350 for 15 minutes, place
               the biscuits on the top of the dish, return to the oven and bake an additional
               10 minutes
