Easy Maque Choux

                                                (Mock Shoe)


                                           Ingredients



               ½ lb smoked sausage
                ½ cup chopped celery
               ½ cup chopped green bell pepper
                ½ cup chopped red onion
               2/1/2 cups water
               1 can diced tomatoes
               1 package Zaterans Jambalaya Mix
               1 cup frozen corn

                                            Lagniappe



               Heat sausage in a large skillet till hot and add the celery, bell pepper, and
               onions.  Cook and stir till the sausage is browned and the vegetables are soft.

               Stir in the water, tomatoes and Jambalaya mix, bring to a boil, reduce heat
               and simmer for 20 minutes.  Stir in the corn, cover and cook for 5 minutes
               longer or until rice is tender.  Remove from heat and let cool, fluff with fork
               prior to serving
