                           Shrimp/Okra Gumbo

                                              (Mom’s Gumbo)

                                         Ingredients



               4 lbs shrimp
               2 lbs sliced okra
               2 med chopped onions
               2 celery stalks
               1 green bell pepper
               2 fresh or ¾ cup canned tomatoes
               1 minced garlic clove
               ¼ pod, of crushed red pepper
               2 tbsp oil
               2 tbsp flour
               1 gallon fish or shrimp stock
               ½ tsp old bay seasoning
               ½ tsp cayenne
               1 tsp salt
               1/tsp black pepper

               Make a dark brown roux of the oil and flour.  Sauté the onions, celery and
               peppers in the roux till soft. Add the tomatoes & garlic then add in the okra
               and simmer a few minutes (if fresh okra is used), sauté with the onions and
               then add tomatoes.

               Add chicken stock gradually about one cup at a time, cover and simmer 45
               minutes.  Add salt, pepper and shrimp at the very last and simmer for no
               more than 10 minutes.  Serve in a bowl over rice with garlic bread on the
               side.

               This is great all-around gumbo soup you can add almost any seafood,
               chicken or andouille you have on hand.
