                                  Potato Patties



                                            Ingredients



               1small box instant potatoes (1/1/2 lb
               ¼ lb plus 2 tbsp un- salted butter
               ½ cup evaporated milk
               1 cup chopped cabbage
               ½ cup chopped onions
               1.5 cups shredded beef
               ¼ cup chicken or beef stock
               ¾ tsp salt
               ¾ tsp garlic powder
               ¾ tsp red pepper
               ½ tsp white pepper
               ½ tsp black pepper

                                            Lagniappe



               In a small pan combine 1 stick of butter and milk, bring to a boil and remove
               from heat.

               In a large bowl whip together the potatoes and butter mixture.

               In another large skillet melt the other two tbsp butter over med heat; add the
               cabbage and onions, sauté till vegetables are wilted.  Add the roast beef and
               stock and continue cooking 5 minutes.

               Add the mixture to the whipped potatoes, mixing thoroughly.  Then add the
               garlic powder, salt and ground peppers. Refrigerate till firm, form into patties
               and fry.

               To fry patties, dredge in seasoned flour; dip in egg wash and coat with
               Zaterans fry mix or something similar

               Serve with sauté cabbage & red onions, poached eggs and cream sauce
