Popeye’s

                                 Red Beans & Rice



                                         Ingredients



               3 cans red beans
               11/4 cups water
               ½ lb ham shanks
               1 large chopped onion
               1 green bell pepper (seeded & chopped)
                ¼ cup lard
               1 chopped garlic clove
               ½ tsp thyme
               1 tsp black pepper
               ½ tsp sage
               1 bay leaf
                  th
               1/4  tsp red pepper
               Salt to taste
               5 cups rice

               Pour two cans of red beans with their liquid, water and ham into a large pot.
               Add all remaining ingredients to the pot except rice and the remaining can of
               beans.  Bring to a boil over medium heat, reduce heat and simmer for about
               an hour.

               Remove the ham bones and bay leaf, run the mixture through a food
               processor or blender. Drain off the liquid from the remaining can of beans
               and pour the beans back into the pot and simmer for an additional 15 minutes
