Cajun Meat Pies
Ingredients
2 tbsp Butter
½ lb ground beef
½ lb ground pork
¼ cup diced yellow onion
½ cup chopped bell pepper
¼ cup chopped
1/3 cup green onions
3 garlic cloves minced
2 tbsp Worcestershire
1 tbsp hot sauce
½ cup beef stock
1/8 cup flour

Melt the butter in a large cast iron skillet, add the ground beef and pork and cook till
they are browned. Add the onions, celery, bell pepper and green onions and cook till
the vegetables are wilted. Add the garlic, hot sauce and seasonings to your taste (salt,
pepper, hot pepper) and cook for a couple more minutes. Make slurry of the stock
and flour, add it to the pot and bring it to a boil. Reduce the heat and simmer for
about 5 minutes stirring constantly. Remove the mixture from the heat, adjust the
seasoning and set aside to cool to room temperature.
Lay out a store bought pastry pie crust, cut it into 3-5 inch circles
Place a heaping tbsp of the mix on each circle and fold over, crimp the edges with a
fork and fry in hot oil till brown.
