Gas grill boys

                                  Red Beans & Rice




                                         Ingredients


               1 lb dry red beans                            Water to cover beans
               2 ham hocks                                    2 cups chopped celery
               2 cups chopped onion                        2 cups chopped bell pepper
               5 bay leaves                                     2 tsp pepper
               2 tsp thyme                                      ½ tsp garlic powder
               1/1/2 tsp oregano                             ½ tsp red pepper
               1 tbsp hot sauce                               1 lb smoked sausage (3/4”) pieces
               4-5 cups cooked rice                        1 can chicken stock

               Cover the beans with 2” water and soak overnight.  Drain before using (or
               use canned red beans)

               Place ham hocks, beans, vegetables and seasonings in a stock pot with ample
               chicken stock to cover 2”.  Bring to a boil, reduce heat and simmer until
               beans are tender.

               Remove the ham hocks and pick the meat from the bones.

               Add red pepper if a little more heat if desired.  Add the sausage and continue
               cooking until the beans begin to break up, add the ham hocks back in just
               before serving and serve over rice.

               Other variations… are chopped jalapenos, adding a can of Rotel tomatoes, or
               2 tbsp liquid seafood seasoning or liquid Crab Boil
