Crawfish

                                          Etouffee

                                                (eh-too-fay)


                                         Ingredients


               1 cup chopped green onions
               1 cup chopped celery
               3 Jalapenos, chopped
               1 tsp minced garlic
               1 stick butter
               3 tbsp flour
               Crawfish fat (or fish sauce)
               1 can chicken broth
               1 lb peeled crawfish
               Salt, Black Pepper, Red Pepper
               2 tsp Paprika
               Green onion tops, chopped
               Parsley, chopped
               1 tsp lemon juice

                                         Lagniappe



               Sauté the onions, celery, jalapenos and garlic in the butter until wilted. Add
               flour but do not brown

               Add crawfish fat or fish sauce and chicken broth, simmer 20 minutes.

               Add Crawfish tails, lemon juice, salt, pepper and Paprika and simmer another
               20 minutes.

               Before serving add onion tops and parsley.
