“Daube “Beef Roast

                                           (Larded Beef Roast)


                                         Ingredients


               5 lb beef round roast
               ¼ lb chopped salt pork (cut into ½ in strips)
               1 tbsp chopped parsley
               1 tbsp thyme
               3 Bays leaves
               4 minced garlic cloves
               2 tbsp minced Spanish onion
               1/8 tsp ground cloves
               2 tbsp kosher salt
               1 tbsp grated black pepper


                                         Lagniappe



               Make 2 inch incisions about 3 inches deep all over the roast.

               Toss the salt pork with the other ingredients and stuff the incisions with the
               mixture. Allow to set overnight.
