Shrimp & Okra

                                     Hushpuppies


                                           Ingredients


               1 cup self rising cornmeal mix

               ½ cup self rising flour
               1 cup small shrimp chopped
               1 tsp Creole seasoning
               ½ cup diced onion, celery, and peppers
               ½ cup chopped okra
               1 large egg lightly beaten
               ¾ cup beer
               Canola oil

                                            Lagniappe


               Stir together the cornmeal and flour in a large bowl

               Sprinkle shrimp with Creole seasoning and add to the flour mixture along
               with the chopped vegetables and Okra. Stir in the egg and beer just until
               moistened and let stand for about 10 minutes.

               Pour oil into a Dutch oven or fryer and drop the batter by the spoonfuls (or
               roll them into small balls) into the hot oil in batches cooking for about 2-3
               minutes per batch

               Drain on a wire rack over paper and keep warm in the oven till ready to serve
