Crab Stuffed

                                     Red Potatoes


                                           Ingredients


               Crab Boil
               5 lbs midsized Red New Potatoes
                 ________________________________________________________

                                             Stuffing

               1 lbs Crab Meat                                                           2 tsp mayonnaise
               1tsp yellow mustard                                                    1 cup chopped onions
               ½ tsp red pepper                                                          1 tsp hot sauce
               4 hard boiled eggs                                                       1 cup sour cream
               ¼ cup shredded cheddar cheese                                  3 sprigs fresh parsley

                                             Lagniappe



               Boil the potatoes in the crab boil till they are firm but cooked.

                Mix all the stuffing ingredients together and set aside.

               Cut the bottom off the potatoes so they will stand. Turn the potato upside
               down and hollow out the other side with a melon baller.

                Stuff the hollowed out portion with the stuffing mix, sprinkle with the
               paprika and garnish with the parsley

               Bake at 350 till potatoes are done (about 20 minutes)
