Chunky

                         Potato Crab Chowder


                                         Ingredients


               2 tsp butter
               1 cup chopped onion
               ¾ cup chopped celery
               1 clove minced garlic
               31/2 cup cubed red potato
               3tsp flour
               21/2 cup milk
               2 tsp thyme
               ½ tsp pepper
               1/4 tsp nutmeg
               1 can cream corn
               1 can chicken broth
               8oz lump crab
               3tsp fresh parsley
               1tsp salt

                                         Lagniappe




               Melt butter in a sauce pan over med heat; add onion, celery and garlic.  Sauté for 4
               minutes, add potato, sauté 1 minute, sprinkle with flour, sauté 1 minute, add milk and
               add everything but the crab, parsley and salt.  Simmer 20 minutes then add the crab,
               parsley and salt.  Cook for only about 5 minutes more stirring occasionally.
