Mustard

                                    Battered Cod


                                         Ingredients




               6 to 8 cod fillets
               1 cup milk
               3 tbsp Creole mustard
               Juice of 1 lemon
               Zaterans fish fry
               salt & pepper
               hot sauce
               Parmesan cheese

                                         Lagniappe


               Season cold water with salt, pepper and hot sauce and allow the Cod to
               marinate in the brine for several hours.

               In a mixing Bowl, mix the milk, mustard and lemon juice. Season the batter
               to your taste with salt and pepper.

               Dip the cod into the batter mix.  Immediately dredge in a mixture of Zaterans
               fish fry and parmesan cheese.

               Cook in hot peanut oil till fish floats (2-3 minutes)
