Pecan Cod


                                         Ingredients



               2 cups roasted pecans
               ½ cup bread crumbs
               4 cod filets
                  th
               1/4  cup olive or peanut oil
               1 cup Meuniere sauce (any garlic butter sauce)

                                              SAUCE

               ½ chopped shallot
               1 tbsp minced garlic
               ½ cup cheap white wine
                ½ lb butter

               Combine the shallots, wine and garlic in a sauce pan and sauté till the wine is
               reduced by ½ .  Wisk in the unsalted butter sticks till they are fully
               incorporated and a little thick, season with Cajun seasoning of your choice

               In a food processor combine the Pecans and bread crumbs till it has a mealy
               texture.

               Season the Cod filets with Cajun or other seasonings of your choice.

               In a sauté pan, heat the oil till smoking hot and add the cod, sauté for 2
               minutes per side, remove, place on a baking dish and top each filet with the
               pecan mixture.

               Place in a 400 oven for 6 to 10 minutes until the crust begins to turn brown.

               Place the Meuniere sauce on the plate; place fish in the center of the sauce
               and Serve with garlic mashed potatoes and Asparagus or Brussels sprouts
