Tuna Tartar



                                         Ingredients



               3 lbs very fresh tuna
               1 1/4 cup olive oil
               5 limes, zested
               1 cup fresh lime juice
               2 1/2 tsp wasabi powder
               2 1/2 tbsp soy sauce
               2 tbsp hot sauce
               2 1/2 tbsp kosher salt
               1 1/2 tbsp pepper
               1 1/4 cups minced green onion
               3 1/4 minced jalapeno peppers
               5 avocados (halved)
               1 ½ tbsp toasted sesame seeds
               Crackers of choice

               Cut tuna into thin slices or cubes

               Combine the oil, lime zest, lime juice, wasabi, soy sauce, hot sauce, salt &
               pepper and pour over the tuna.  Add the jalapenos and green onion and mix
               well.

               Cut the avocados in half and dice into ¼ inch pieces

               Carefully mix the avocado into the tuna mixture, add the sesame seeds and
               season to taste.

               Allow the mixture to sit in the refrigerator for at least an hour before serving
               on crackers.
