Gaido’s famous

                          galveston Crab Cakes




                                         Ingredients


               4 tbsp mayonnaise
               5 tsp mustard
               5 tsp Worcestershire
               3 tbsp Old Bay
               5 tbsp softened unsalted butter
               5 tsp half-and-half
               5 tbsp minced shallots
               3 eggs
               21/2 cups fresh bread crumbs
               21/2 pounds lump crab meat

                                         Lagniappe


               Pre heat the oven to 350.  Combine the mayonnaise, mustard,
               Worcestershire, old bay, butter, half & half, shallots and eggs in a mixing
               bowl.

               Add the bread crumbs and mix till the crumbs are saturated.  Fold 2 pounds
               of the crab meat into the mixture gently.

               Coat 10 4 oz baking cups with nonstick spray and divide the mixture evenly
               among the cups.

               Bake for 15 minutes and remove the cakes from the cups.

               Sear the crab cakes in a little oil in a pan till light brown on both sides.

               Top each cake with a couple of pieces of crab meat and drizzle with some
               Cognac sauce, Meuniere sauce or something similar.
