Gas grill boys

                                Green Chili Stew



                                         Ingredients


               3 tbsp olive oil
               3 lbs pork butt, cubed
               1 large onion diced
               6 large minced garlic cloves
               1 can chicken broth
               1 bottle dark beer
               1 tbsp cumin
               1 tbsp oregano
               1 cinnamon stick
               1 ½ lb tomatillos, chopped
               6 Poblano chilies, chopped
               2 orange bell peppers, chopped
               1 bag frozen corn (16 0z)
               ½ bunch chopped cilantro
               2 tsp salt
               2 tsp orange zest

               In a large pot brown the pork and set aside

               Add the onion and garlic; reduce the heat to medium and cook while stirring
               for 6 min.  Add the broth, scraping the browned bits in the pot, add brown
               beer, pork butt, cumin, oregano and cinnamon stick to the pot and bring to a
               boil. Reduce the heat to low and simmer for 1 hour stirring several times.

               Stir in the tomatillos, simmer in a covered pot for 1 ½ hours.  Add the chilies,
               bell peppers and corn and continue cooking another 15 minutes or until the
               pork is very tender.  Stir in the orange zest, cilantro and salt to taste.
