                      Famous Green Chili Pork




                                         Ingredients


               2 lbs boneless (country style) pork ribs
               2 yellow onions chopped
               ½ small can diced jalapeno chilies
               1 cup (large can) New Mexico green chilies, seeded and chopped
               ¼ cup garlic minced
               1 cup Monterey Jack cheese
               2 cups (5) Poblano chilies roasted, peeled and pureed

               To peel the Poblano’s; grill or cook them directly over the stove burner or
               BBQ grill till the skin is blistered.  Place in a plastic bag for 1 hour and then
               peel or scrape the burnt skin off.

               In a heavy pan, brown the pork ribs in 2 tbsp oil, add the onion, diced
               jalapeno, diced green chilies and garlic to the pork and cook 11/2 hour till
               meat is tender. Add the Poblano chili puree and simmer for 45 minutes.  Add
               kosher salt to taste sprinkle with the Jack cheese when done and serve with a
               lot of tortillas and Mexican Beer

               This recipe also works well in a crock pot
