Pecan Butter sauce

Ingredients
4 tbsp unsalted butter
½ cup chopped pecans (dry roasted)
2 tbsp chopped onion
1 tsp lemon juice
½ tsp Tabasco
¼ minced garlic
Lagniappe
Place all ingredients in a blender or food processor and process until creamy
and smooth. Bring to a boil and let cool

Popeye’s Cajun Gravy
Ingredients
11/2 tsp vegetable oil
11/2 tsp flour
41/2 tsp flour
2 dashes white pepper
1 dash red pepper
1/8 tsp paprika
¼ tsp salt
1 can chicken broth
Lagniappe
Cook the oil and flour into a brown roux. Add the remaining ingredients and
bring to a boil until the mixture thickens.
