Ranchero Sauce
Ingredients
1 tbsp oil
1 medium onion chopped
1 medium green bell pepper chopped
½ cup chopped green chilies (canned)
1 jalapeno pepper diced
4-5 tomatoes chopped
1 tbsp white vinegar
1 tsp sugar
½ tsp cumin
½ tsp salt
1/3 bunch cilantro
1tbls lime juice
¾ cup Monterrey jack cheese
8 eggs

Warm the oil, add onion, garlic and cook till the onion has softened, add the
peppers, tomatoes, sugar, white vinegar, cumin and salt. Cook for 15
minutes. Add the lime juice and cilantro the last 2 minutes of cooking. If
too dry add water.
For Huevos Rancheros add sauce to a skillet, break the eggs into the sauce
sprinkle with Monterrey jack cheese, cover and poach the eggs & cheese in
the sauce. Serve on a warm tortilla with some additional sauce along with
refried beans. Top with fresh cilantro.
