Gaido’s
Remoulade’ sauce
Ingredients
3 green onions
2 cups real mayonnaise
1/3 cup fresh parsley
4 tbsp Creole or Dijon mustard
1 tbsp capers
1 tsp paprika
1 oz anchovies
½ tsp white pepper
5 tbsp dill pickle relish
Lagniappe
Grind the green onions, parsley, capers, relish and anchovies in a food
processor. Blend in the mayonnaise, add the Creole mustard, paprika and
white pepper adding the green onions last. Serve cold over warm garlic toast
with shrimp or smoked oysters.
