Catfish

                                      Sloppy Joes




                                         Ingredients


               8 oz diced Catfish
               Pinch coarse salt
               1 small onion diced
               1 small green pepper, diced
               1 small bell pepper diced
               1 cup BBQ sauce
               Unsalted butter
               Large over sized buns
               2 tsp paprika


                                         Lagniappe



               Sauté the onions and peppers in a little oil a few minutes till they begin to
               soften.

               Stir in the paprika and mix well, add the Catfish and cook for a couple of
               minutes and stir in the BBQ sauce.

               Bring the mixture to a boil, reduce to a simmer and cook for another 10 to 12
               minutes.

               Butter the rolls and lightly toast butter side down, fill and serve hot.
