“The” Redfish’s famous

                             Grilled redfish




                                         Ingredients



               6-10 redfish filets (skin & scales intact)
               1/2 stick butter
               2 cups Italian dressing
               1 cup Thousand Island dressing
               1 8oz bottle tiger sauce (Chrystal’s)
               1 tbsp Tony Cratchers
               1 tbsp garlic powder
               3 tbsp lemon juice.
                                         Lagniappe


               In a sauce pan melt down the butter & hot sauce

               Add the Italian and Thousand Island dressings

               Add the dry ingredients and stir till they are dissolved completely in the
               sauce

               Pat dry and season up the filets with salt & pepper

               Place skin side down on the grill or smoker

               Sprinkle generously with some Italian Bread Crumbs

               Spoon the sauce over the fish and cook for 6-8 minutes on the grill or in a
               smoker till flaky (about 1 hour at 225)
