Chicken Bombs



                                            Ingredients


               Boneless chicken breast
               Jalapenos
               Cream Cheese
               Pepper Jack Cheese (shredded)
               BBQ sauce
               Cajun seasoning
                                             Lagniappe



               Slice the chicken breast lengthwise

               Pound out the breast till they are 1/8 to ¼ inch thick

               Clean out the center of the Jalapenos

               In a mixing bowl, add cream cheese, pepper Jack cheese and about 1 tsp Cajun
               seasoning and mix till well blended

               Stuff this mixture into the Jalapenos

               Lay the flattened chicken breast on a cutting board and sprinkle with some Cajun
               seasoning.

               Lay one of the stuffed jalapenos flat on the chicken breast and roll the chicken breast
               around the Jalapeno.

               Wrap two strips of bacon (one at a time) around the rolled chicken breast and secure
               it with a toothpick

               Grill the chicken bombs at 300 for 25 to 30 minutes turning about every 5 minutes.

               After 10 minutes of grilling baste with BBQ sauce, each time you turn the chicken
               breast

               To smoke the bombs, place in the smoker at 250 for about two hours, basting with
               the sauce the last hour.  Chicken will be done when it reaches 165-170
