Grilled

                               Birds of paradise




                                         Ingredients



               8 skinned boneless chicken breasts
               8 slices Monterey Jack cheese
               ¼ cup Parmesan cheese
               1 tsp chili power
               8 whole green chilies canned or roasted
               8 slices ham

                                           Lagniappe



               Pound out the Chicken breasts till flat and season with some store
               bought Mexican Chicken Pollo Asada seasoning, or use chicken pre
               marinated in Pollo Asada marinade.

                Layer the green chilies, Monterey Jack Cheese and Ham on the
               breasts.

               Roll the chicken breast and secure with a skewer or tie with heavy
               twine.  Season with ground chili powder and chicken seasoning,

               Grill the chicken on med heat for 20 minutes, or until the chicken is
               done.
