Grilled

                                 Smoked chicken




                                            Ingredients



                          Brine                                                            Rub

               1 gallon cold water                      2 tbsp onion powder
               2/3 cup sugar                            1 tbsp white sugar
               3/4 cup soy sauce                        1 tbsp Paprika
               1 tsp tarragon                           2 tsp dried parsley
               1 tsp thyme                              1 tsp garlic powder
               1 tbsp black pepper                                      1 tsp crushed oregano
                                                        1 tsp black pepper
                                                        1/2 tsp crushed red pepper

               Brine the chicken 6-8 hours in the refrigerator

               Pat the chicken dry and work some oil into the skin to hold the rub

               Work the rub into the chicken pieces and allow it to stand overnight in the
               refrigerator

               Heat your smoker to 225’ with some apple wood and add the chicken

               Smoke at 225 for 2 hours, or until the breast reaches 175’ and the thighs 165’

               Finish on grill over medium heat for about 20 minutes with your favorite
               sauce

               Let the chicken rest for at least 15 minutes before cutting or serving.
