萝卜苗为平远的特产，新鲜采摘后经过晾晒，加盐揉搓后装入瓮中，经过一段时间自然发
酵，形成独特的风味。在梅州客家菜中，酸辣口味的菜肴并不多见，而平远地处赣南交界，
受江西风味的影响较深。这道可口的菜深受嗜辣人士的喜爱。
■ Dish Story
Radish sprouts are a specialty of Pingyuan. After freshly picked, they are sun-dried, salted and
fermented in pottery jars to develop a distinctive flavour. While sour and spicy dishes are uncom-
mon in Meizhou Hakka cuisine, Pingyuan’s proximity to southern Jiangxi, is greatly influenced by
Jiangxi’s flavours, making this dish gaining popularity among spicy food enthusiasts.
