梅县人通常把豆腐称为“豆干”，而豆腐花称为“豆腐”。豆腐花除了可白糖“腌生”外，
也常与鲮鱼肉、虾米或瑶柱等一起焖煮，味道尤为鲜美，是一道特别下饭的家常菜肴。

■ Dish Story
In Meixian, tofu is commonly referred to as “dried bean curd”(“dougan”), while tofu pudding is simply
called “tofu”. Besides being enjoyed with sugar, tofu pudding is frequently stewed with dace fish,
dried shrimp or dried scallops, creating an exceptionally savoury flavour. This dish is a beloved
home-cooked specialty and a perfect accompaniment to rice.
