Yellow catfish, scientifically known as pelteobagrus fulvidraco, is a premium scaleless fish com-
monly found in the Meijiang River, especially abundant during spring. Making soup with pickled
radish is a classic dish in both households and restaurants. Since the fish produces a lot of mucus
content, it’s advisable to blanch and rinse it quickily before frying.
