            拳头粄因揉面团时需要用拳头压制而得名,梅县人亲切地称为拳头粄。切成细条的拳头粄则
            变为手工面条,可炒可腌。梅县人也擅长煮拳头粄,将蒜头用猪油煸香后加入二汤,再加上
            鱼露调味,辅以苦脉梗,乡土风味浓郁。

            ■ Dish Story
            The name “Fist Rice Cake” comes from the technique of pressing the dough using fists, a method
            cherished by Meixian people who affectionately call it “Fist Rice Cake”. When cut into thin strips,
            they transform to handmade noodles, which is suitable for stir-frying or pickling. Meixian people
            are also skilled at cooking fist cakesby stir-frying garlic in lard until fragrant, they add a light broth
            and season it with fish sauce, and complement it by bitter greens, creating a rich, rustic flavour.
