■ Dish Story
This dish is a specialty of Meixian, known for its use of steaming to retain the chicken’s natural
flavour and nutritional essence. Ginger is a staple in Hakka cuisine. Its ability to regulate digestion
and warming the body is particularly beneficial in the cold, humid and foggy climate of the moun-
tainous regions.
