CO 2 gas, where calcium carbonate is precipitated and fructose is separated from
the filtrate by concentrating and crystallization.
Properties:
▪ Colorless crystalline or granular powder, soluble in water.
▪ Sweeter than glucose and twice as sweet as sucrose.
▪ Reduces Fehling’s and Barfoed’s solution.
▪ Forms osazone (Fructosazone, identical to that of glucose).
▪ Exhibits mutarotation:
-D-(-)-Fructose -D-(-) Fructose

a) Seliwanoff’s test for ketoses: + ve.
Fructose + HCl + Resorcinol Heat Red color Brown ppt.
b) Cobalt nitrate: violet color
Uses: added to infant feeding formulas, as it is easily digested than glucose.
N.B: It is synthesised in the seminal vesicles, and so present in large amounts in
male reproductive tract.
