Phytic acid
• The hexaphosphoric ester of inositol.

• Forms insoluble salts with Ca , Mg , Fe & Cu , Prevent their absorption

from diet in the small intestine.
• So it is better to avoid maize and legumes in diet of anaemic patient with
iron rich diet or haematinic drugs.
2) Acidic sugars:
There are three important types of acidic sugars: (see above)
a) Aldonic acids: (see above)
▪ They are obtained by oxidation of the carbonyl group.
Ascorbic acid “Vitamin C”: (Enol form).

Preparation:
1) It could be extracted from citrus fruits, sore hips, blackcurrants.
2) Chemical synthesis from glucose.
3) Vitamin C (L-ascorbic acid) is an important aldonic acid lactone.
