                                    20 Durham SaladPreparation time:30 minutesServes: 4Ingredients1 medium lettuce3 spring onions1 small red onionA bunch of fresh mint2 tbsps caster sugar 3 tbsps malt vinegarMint sauce is a staple of any lamb Sunday dinner. Throw some other stuff in there and you get a Durham salad. Give it a go the next time you%u2019re on Sunday dinner duty, or put it on top of a Yorkshire pudding for a starter.Instructions1. Finely chop the mint and mix it with the vinegar and sugar until the sugar has dissolved. Leave to marinate for 20 minutes.2. Chop up the lettuce as finely as possible and put in a small serving bowl that you%u2019ll put on the dinner table.3. Finely dice the spring onions and mix with the lettuce.4. Pour the now-marinated mint sauce over the lettuce and spring onions and mix well.5.
