60 Pink SlicePreparation time:40 minutes plus cooling and setting overnightCooking time:35 minutesServes: 24Ingredients300g butter or margarine120g caster sugar1 large egg yolk500g plain flourPinch of salt400g raspberry jam500g icing sugarPink food colouring2 tsp vanilla extract 80ml waterFew items can claim to be more Sunderland than the glorious pink slice. Why pink? I have no idea. But Wearside%u2019s answer to the tray bake should be given protected status.Instructions1. Pre heat the oven to 180%u00b0C/160%u00b0C fan oven.2. Line a 20x30cm tin with baking parchment or greaseproof paper (to help remove the slice after baking).3. Make sure the butter is at room temperature, and beat it together with the caster sugar, vanilla extract, salt and egg yolk with an electric blender or whisk until the mixture is a pale colour.4. Stir in the flour using a wooden spoon then use your hands to turn it into a crumbly dough.5. Press half the mixture into the base of the tin as evenly as possible - using a potato masher here is helpful. Smooth the top.6. Spread the jam over it, leaving a 1cm gap from the edge.7. Roll the other half of the mixture out on a board with a rolling pin. Put the tin on top and trace round it with a knife to get the rough size you need. Slide the rolled mixture off the board into the tin, covering the jam to make a second layer. Trim if it%u2019s too big, and press spare mixture round the sides if it%u2019s too small. Don%u2019t worry if it isn%u2019t completely even - the icing will hide it.8. Bake for 35 mins until golden. Leave in the tin to cool.9. When cool sift the icing sugar and stir in 80ml of water and a little food colouring - try half a teaspoon and add more to taste. Aim for thick icing. Add more water if necessary but beware it can very quickly become too runny.10. Pour the icing over the base and tilt the tin to spread evenly. Leave to set overnight ideally. Remove from the tin and cut into squares.Gan git posh: Use apricot and passionfruit jam and orange food colouring.Cannet be boshed: Buy one from one of many independent bakeries across Sunderland or the A Love Supreme shop opposite the Stadium of Light.
