                                    72 Pink Ice - Pink Slice Ice CreamPreparation time:15 minutesSetting time:4 hoursServes: 12-15Ingredients600ml double cream1 tin condensed milk250g strawberries125g shortbread biscuits2 tsps vanilla essence2 drops red food colouringPink slice flavoured ice cream. Like putting Double Maxim in a chocolate cake, you%u2019re going to be left wondering why this has never been done before. Bring extra joy to the long hot summer days that Wearside is so well known for by introducing pink ice. It%u2019s a great recipe to get the kids to help with too.Instructions1. Put the condensed milk and double cream in a bowl and whisk until it is smooth and even. 2. Mash the strawberries and add them in with the vanilla essence. Whisk on a low-medium speed until the mixture is smooth.3. Increase the speed and whisk for 1-2 minutes until the mixture starts to thicken.4. Put the shortbread in a plastic bag and bash into smaller pieces using a rolling pin or anything else you can find that would do the job. Don%u2019t go as far as turning them into crumbs!5. Get a tub or tin that you%u2019re happy to put in the freezer (like an old ice cream tub). Put a third of the mixture in the tub, add a third of the shortbread and stir through. Do this two more times. 6. Put some dots of food colouring across the surface, then use a skewer or toothpick to swirl it to make the ripple effect.7. Put it in the freezer for 4 hours to set. It will keep for at least one month. When you come to eat it leave out for 10 minutes before serving to allow it to soften slightly and be sure to serve it with monkey%u2019s blood.Cannet be boshed: Hopefully ice cream parlours across Sunderland will be selling this once they realise how good it is!
