                                    68 Sly CakesPreparation time:15 minutesCooking time:40 minutesServes: 16Ingredients275g plain flour75g butter75g lard50g caster sugarPinch of salt325g sultanas or currants (or a mix)75g walnuts2 tsps mixed spiceMilk for glazingCaster sugar to sprinkleWhen your culinary repertoire features a lot of pies then you%u2019re going to get a lot of leftover pastry. And what do you do with it? Make sly cakes of course!Instructions1. Pre heat the oven to 190%u00b0C/170%u00b0C fan oven.2. Put the flour, salt, lard and butter in a bowl. Rub together with your fingers until the mixture starts to look like breadcrumbs.3. Mix in the sugar then add a small amount of water a little bit at a time until the mixture turns into a dough. Put it in the fridge.4. For the filling, chop the walnuts and put them in a bowl with the dried fruit, mixed spice and a sprinkle of sugar and mix.5. Grease a baking tin or line with greaseproof paper. Split the pastry into two pieces, and roll out so both pieces fit the tin. 6. Place one piece in the tin. Spread the filling over it, then place the second piece of dough on top. Glaze this with milk.7. Put in the oven for up to 40 minutes until the pastry is golden. Remove, sprinkle with caster sugar then cut into squares once cooled.Gan git posh: Add chopped figs, taking away as much dried fruit as you add in figs.Cannet be boshed: Buy pre-made pastry instead of making it.Save the gissies: Swap the lard for butter.
