Directions: In a food processor, (for the crust) blend together: 1/2 cup of ground flax, ½ cup of
walnuts, 2 tbsps. of coconut flour, 3 tbsps. of Monk fruit/stevia & enough water until batter
becomes sticky. Press the batter in a round baking pan & pour filling on top.
Filling: Blend together: 2 cups of organic non-fat plain greek yogurt, 2 eggs, 1/2 cup of
blueberries, 2 tbsps of coconut oil, 1 tsp of vanilla extract, 1 tsp of sea salt. Bake at 375 for about
45 mins-1 hour. Let sit in the fridge for at least 1 hour before serving.
