Aphrodite’s Apple
Oatmeal Bread
When making offerings to Aphrodite, the goddess of many types of love, the
ancient Greeks almost always included apples. The apple symbolizes not just
sensuality, but also nourishment and self love. Oatmeal, a long prized breakfast
food for its balance of healthy carbohydrates and high fiber, pairs perfectly with
apples to make this delicious breakfast bread.
Ingredients: Pulse the oats through a food processor
1 tbsp lemon juice or blender until they have the consistency
4 cups Granny Smith apples, peeled and of coarse cornmeal. Mix the cinnamon,
cubed flour, and baking soda in another mixing
1/2 cup old-fashioned oats bowl before adding the oats. Stir.
1 cup all-purpose flour
2 tsp baking soda Cream the butter and sugar together until
2 tsp ground cinnamon fluffy. Add the vanilla and salt. Begin
1/2 cup unsalted butter beating, and add the eggs one at a time.
1/2 cup sugar
1/2 tsp vanilla extract Add half the dry ingredients and mix well
1/2 tsp salt before adding the apple juice. Stir again
2 large eggs before adding the rest of the dry ingredients.
1/4 cup apple juice Fold in the apples and half of the pecans.
3/4 cup chopped pecans Once mixed, transfer to the baking dish.
Instructions: Top with the remaining pecans and bake
Preheat the oven to 375 degrees F. Spray for 25-30 minutes. Remove from the
a 9”x13” baking pan with cooking spray. oven and let cool completely.
In a medium mixing bowl, toss the
apples with lemon juice and set aside. Enjoy!
