The search for a low-carb, easy-to-prepare dish is over with this delicious
recipe which is also perfect for entertaining. The dish may be prepared
in advance – perfect for when you have guests coming over. It is also
very easy to increase the servings to suit any number of guests. For those
not following a low-carb diet, try switching it up by adding panko or
bread crumbs over the top.
ingreDients
4 T mayonnaise 2 chicken breasts (skin removed)
4 T sour cream ¼ t salt and ¼ t pepper for sauce plus
2 t Dijon mustard salt and pepper chicken to taste
2 oz Brie 10 spears fresh asparagus (stalks trimmed)
Directions
l Preheat oven to 375 degrees.*
l Mix together the mayonnaise, sour cream, Dijon mustard, ¼ t salt and ¼ t
pepper. Set aside.
l Salt and pepper the entire chicken breast to taste.
l Use a rolling pin or the smooth side of a meat mallet to flatten the chicken
breasts.
l Spread equal amounts of the cream mixture on the chicken breasts.
Retain leftover mixture to put on top of cooked chicken if desired.
l Add half the asparagus and Brie to each chicken breast.
l Roll up each chicken breast and place join-side down on a baking tray
Chicken l Bake approximately 30 minutes.
