Lemon Posset

                                      served with buttery shortbread and raspberries

                                           Make the lemon posset

                            Preparation time approx. 15 minutes (this will need at least 2 hours to set)


           Ingredients required:                                                Equipment required:

           • 200ml double cream                                                  • 1 medium saucepan

           • ½ lemon                                                             • Sharp knife

                                                                                 • Fine grater

                                                                                 • Whisk

                                                                                 • Wooden Spoon
                                                                                 • Serving glass/ramekin
           Pantry Ingredients required:

           • 70g white sugar










          1. Pour the cream and add the sugar into the saucepan and heat until the
             sugar is dissolved. Have your saucepan on a medium heat, allow the
             mixture to come to a simmer for 1 minute and then remove.

          2. Next, grate in the zest of ½ lemon. Then squeeze in the juice ensuring no
             pips end up in the mixture, stir or whisk to combine.

          3. Once done, pour the mixture into the serving glasses/ramekins ensuring
             to divide them equally, allow to cool slightly at room temperature for 20
             minutes, then cover with cling film and place in fridge until serving.
