Chocolate Soufflé
served with orange cream
Make the chocolate soufflé mix
Preparation time approx. 15 minutes
Ingredients required: Equipment required:
• 15g butter • 1 heatproof mixing bowl
• 60g dark chocolate • 2 saucepans
(1 with simmering water in, ¼
• 1 egg full)
• Whisk
Pantry Ingredients required:
• 15g plain flour
• 80ml whole milk
• Pinch of salt
1. Break up the chocolate into pieces and add them to a heat proof mixing
bowl. Set the bowl over a lightly simmering pan of water and melt the
chocolate, ensuring the water doesn’t touch the bottom of the bowl.
2. Whilst the chocolate is melting add the butter in a saucepan over a
medium heat. Once the butter has melted add the flour in bit by bit. Whisk
until flour is incorporated into butter and the mixture thickens, about 1
minute. Reduce heat to low.
3. Add in the milk and whisk until mixture becomes smooth and thickens,
this will take approx. 2 minutes.
4. Once thickened remove saucepan from heat. Transfer the mixture into the
bowl with melted chocolate. Add a pinch of salt and mix thoroughly. Add
1 egg yolk and mix to combine. Do not discard the egg white, you will
need it later.
5. Cover and place in fridge until the beginning of your meal.
