Lemon Posset
served with buttery shortbread and raspberries
Make the shortbread
Preparation time approx. 45 minutes
Ingredients required: Equipment required:
• 40g butter • 1 mixing bowl
• Baking tray
• Greaseproof paper
• Pre-heated oven to
170 C(fan)

180 C(conventional)

Pantry Ingredients required:
• 60g plain flour
• 20g caster sugar
1. Add the butter, flour and sugar into a mixing bowl and combine with your
fingers until it resembles breadcrumbs.
2. Next, bring the mixture together to form a dough ball, pressing firmly to
make sure it comes together well.
3. Place the dough ball onto greaseproof paper and then place in your
chosen baking tin. Using the ball of your hand and your fingers flatten the
dough until it is between 8-10mm thick. Once done place in the fridge to
chill for 20 minutes.
4. Remove from fridge, sprinkle over some sugar and cook for 15-20
minutes until golden on top. Remove from oven and allow to cool slightly,
then place on plate until serving.
