So Fluffy Pan Cakes



            2 ½ c cake flour                                                        Yield: 20 pcs
            1 ½ c all purpose flour
            4 pcs XL egg whites

            2 pcs XL eggs
            2 tbsp baking powder

            ½ tbsp vanilla
            ¾ c full cream milk powder
            3 c evaporated milk

            1 cup sugar
            ½ c oil

            ¾ c butter softened

            Topping:

            softened butter

            maple syrup or honey

            Sift all the dry ingredients.

            In a bowl, cream butter, eggs and sugar. Add all milk powder and

            evaporated milk.

            Blend well, add vanilla, oil, all purpose flour, baking powder and cake
            flour. Beat egg whites and sugar. When it reaches medium peak, fold egg

            whites mixture to batter mixture.                             Use ½ measuring cup
                                                                            to scoop the batter.


            Heat a nonstick pan. Put batter mixture on pan and let it create bubbles,
            flip and do the same on the other side.
                                                                           Cook over low heat for
                                                                              the best results.

            Top with softened butter, honey or maple syrup.                                             93
