Special Siopao



             4 c bread flour                                                        Yield: 30 pcs
             4 c all purpose flour

             1 c refined white sugar
             2 ½ tbsp yeast
             1 tbsp baking powder

             ½ tbsp bread improver
             1 tbsp fine salt

             ½ c shortening
             6 egg whites beaten
             ½ c warm water

             1 c water
             extra flour for dusting

              In a bowl, dissolve yeast and 1 ½ tbsp sugar in warm water. Let it

             stand for 10 minutes.

              In another bowl, sift the dry ingredients twice. Mix the yeast mixture
             with the flour mixture. Add water, egg whites and shortening.


              Knead the dough on a floured surface till elastic and smooth.

             Form dough into a ball and let it rest on a greased bowl for 1 ½ -2
             hours.

              Prepare 4"x4" baking paper while waiting for the dough to rise.

             Punch dough and knead again. Cut dough into 75 grams each. Flatten

             each with a rolling pin and put filling on the siopao dough.

             Gather the edges and twist to seal. Place each filled dough on the
             baking paper.
