Cream Cheese Ube Mamon


                                                                                     Yield: 24 pcs
             3 ¾ c cake flour                 2 tbsp ube powder
             1 ½ c butter                     2 tsp ube flavoring          For the topping:

             1 c white sugar                  20 pcs XL egg yolks          butter
             2 tsp baking powder              For the meringue:            sugar

             1 c evaporated milk              20 pcs XL egg whites         grated cheese (optional)
             1 c cream cheese                 1 c white sugar
             1 c corn oil                     2 tsp cream of tartar

             ½ c halayang ube



             In a bowl, sift together cake flour and baking powder.


             In another bowl, combine evaporated milk, oil, halayang ube, ube
             powder, ube flavoring.

             Cream egg yolks cream cheese, sugar and butter.

             Add ube-milk mixture and flour mixture to butter mixture, incorporate

             well till blended.

             Using an electric mixer, beat egg whites, remaining sugar, and cream
             of tartar until medium peaks form. Fold into the batter mixture.

             Pour into lined mamonor cupcake molds up to ¾ full.

              Preheat the oven. Bake at 350°F for 20 to 30 minutes.


              Brush with melted butter, then sprinkle with sugar and grated cheese.
