Special Bibingka w/ Gata







              4 c all purpose flour                                                 Yield: 10 pcs
             2 c rice flour

             2 c glutinous rice flour
             3 ¼ c condensed milk

             4 c coconut cream
             1 cup salted butter melted
             3 ¼ c + 2 tbsp white sugar

             3 ½ tbsp baking powder
             4 c shredded buko meat

             4 c of grated cheese
             extra butter for brushing

             wilted banana leaves for lining


             Mix all the ingredients except coconut meat and cheese. Line an 8"

             round pan line pan with wilted banana leaves. Pour mixture up to ¾
             full and top with shredded coconut meat.



             Bake in a 350°F for 25-30 minutes till golden brown. While hot,
             brush with melted butter and top with grated cheese.
