Special Puto sa Gata





            3 c all purpose flour                                           Yield: 60 Large Puto

            3 c rice flour
            2 c glutinous rice flour
            3 tbsp baking powder

            2 c + 2 tbsp sugar
            ¾ tbsp salt

            1 cup condensed milk
            3 ½ c coconut cream
            8 XL eggs

            1 cup oil
             3 c coconut meat shredded



            For the yeast mixture:
            ½ c warm coconut cream

            ¾ tbsp yeast
            2 tbsp sugar



            Dissolve yeast and sugar in warm coconut cream. Let stand for 10
            minutes. In a bowl, sift the dry ingredients together.

             Add eggs, condensed milk, evaporated milk, shredded coconut meat and
            oil. Line puto molder with wilted banana leaves. Pour puto mixture. Top

            with cheese. Rest for 30 minutes.


            Fill half of steamer with water and let it boil. Arrange puto molder in the

            steamer and steam puto cheese for 20-25 minutes.
                                                                     Put a cheesecloth between the
                                                                  layers to a avoid water drippings.
