Special Palitaw




             Yield: 36 pcs



             9 c glutinous rice flour
             4 ½ c water

             4 ½ c grated coconut
             2 ½ c granulated white sugar

             2 c sesame seeds, toasted
             For cheesy yema filling:
             3 c condensed milk

             2 c cheese spread
             14 egg yolks

             ¾ c butter
             1 tbsp cornstarch



             In a bowl, combine glutinous rice flour and water. Flatten the palitaw
             dough and put the filling. Seal and flatten again like a disk.



             Drop in boiling water, one at a time. When the Palitaw dough floats,
             that means it is cooked. Transfer to a tray lined with banana leaves,

             then roll in coconut, sugar and sesame seeds.
